Ambrea is a parallel habitable moon orbiting Polyphemus, inhabited by the 222 Yellowheads, a sapient humanoid species almost similar to humans.
Their amber-skin tone is a byproduct of the lemons they eat. This would be similar to how flamingoes are pink because of the carotenoid pigments in the shrimp.
